Our Road & Chic health guru and certified personal trainer, Ixchel Mendoza, is whipping up some delicious, nutritious drinks for late summer. This sweet, frothy juice is the perfect light and energizing drink to get you going in the morning and is chock-full of vitamin A,C, calcium and iron.
Mendoza recommends checking out your local farmers market for organic, seasonal fruits, veggies, and herbs.
1 cup coconut water
1 peach, pitted
1⁄2 cup frozen grapes
1 medium or 2 small bunches baby bok choy
1⁄2 cup loose mint leaves
1 tbsp coconut oil
1 heaping tsp matcha green tea powder
Put all ingredients in a blender and blend until smooth. Optional: garnish with a slice of peach and sprig of mint.
